Phad Thai

Ingredients
- 2 cloves of garlic, crushed and chopped
- 2 tbsp rapeseed oil
- 100g Vegetarian Wok Sauce
- 15g ginger, thinly sliced
- 50g button mushrooms
- 50g mixed peppers, sliced
- 30g spring onions, cut in 4cm length
- 50g baby corn cut in halves
- 50g onions, sliced
- 50g pak choy, sliced
- 50g broccoli florets
- 50g carrots, sliced
- 35g Chinese leaves, sliced
- 2 chillies, sliced
method
- Blanch the carrots for 3 minutes, the broccoli for 2-3 minutes and baby corn for 1 minute and then plunge in cold water. Keep to the side
- Bring the wok to a medium to high heat, add the oil, garlic and ginger. Stir until you get a nice aroma
- Add the mushrooms, peppers, scallions, baby corn, Chinese leaves, spring onions, pak choy, onions and chillies
- Cook for another 1 to 2 minutes. Add the all purpose wok sauce and mix well for 1 to 2 minutes
- Perfect served over Simply Better Organic Jasmine Rice
